Sate Chicken Pita Pockets

This is one of those cook once, eat twice recipes that is perfect for summer barbeques and picnic.

Double the skewer recipe and once cooked store them in an airtight container in the fridge for up to 3 days.

Ingredients

1 batch of cooked Sate-style chicken skewers

8 pita pockets, cut in half through the middle

1 cup Greek or natural yoghurt

1 small bag mixed salad leaves

 

Method

Remove the chicken from the skewers.

Gently open the pita pocket and place some lettuce, chicken and yoghurt inside each pocket.
