Whole BBQ Snapper Recipe

Fish cooked on the barbie is a glorious thing. 
It can also be a delicate thing to cook.
We've cooked this whole snapper in foil on the bbq to protect the skin and add extra flavour by wrapping it with a rainbow melody of fresh, bright vegetables.
If you are not skilled or practised in the art of descaling fish, ask your local fishmonger to descale and gut the fish for you.


The most important thing to remember with this recipe is to find the freshest fish you can.


1 snapper, scaled & gutted, and sliced on each side in 3 places on its flesh
1 yellow capsicum, sliced
1 red capsicum, sliced
1 green capsicum, sliced
1 Spanish onion, peeled & sliced
1 lemon, sliced
1 lemon, quartered to serve
Salt & pepper to season

Heat your BBQ over medium-low heat.


Tear off two sheets of foil that are twice the size of the fish and lay them on top of each other on the bench.

Place half of the vegetables on the foil, lay the fish over the vegetables and place the remaining vegetables into the fish's cavity with the sliced lemons.


Season with salt and pepper, and wrap the fish by bringing the longer sides up and together and folding in the sides.
Place the fish in the BBQ, close the lid and cook for 3 mins.


Turn and cook for a further 4 mins.


Remove from the grill and rest for two minutes. Then, check the fish to see if it's cooked to your liking. If it's a little under, return to the grill for one more minute. 


Keep an eye on it, it will cook quickly.


Serve with lemon wedges, the cooked vegetables and your favourite salad!
