Rainbow Super Coleslaw Recipe

This slaw is chocker block with veggies and tastes fantastic. If you don't want to use olive oil for the dressing you can use your favourite mayonaise. 

This made enough super slaw for a party!



1 bunch kale, thinkly sliced

A handful spinach

1 carrots, julienned

1/4 red cabbage, thinkly sliced

1/2 white cabbage, thinly sliced

4 celery stalks, julienned

1 Spanish onion, thinly sliced

1 green apple, cored, julienned

Dressing Ingredients:

Olive oil

Lemon Juice

Salt & pepper

White condiment


Place julienned and sliced vegetables, place in a bowl and toss to combine.

Mix olive oil, lemon juice, salt, pepper and white condiment together and pour over veggies.
