Greek Beef Skewer Souvalaki Recipe

Makes 8 skewers

If there is one thing Greeks do well, it's marinating meat to cook over a fire!

These skewers are super tasty and super easy to make too! 

If you're using bamboo skewers, ensure you soak them in water before threading the beef on.

You can eat this beef wrapped as a souvlaki or serve it like a Mediterranean salad plate.

 

500g beef, cubed
8 Pita pieces of bread
Garlic-infused olive oil
½ iceberg lettuce, sliced
1 Spanish onion, sliced
1 tub tzatziki

Marinade Ingredients:

10 sprigs thyme, leaves removed
1 tbsp dried oregano 
¼ c olive oil,
3 cloves garlic, crushed
1 tsp coarse salt
1 tsp cracked pepper
Juice of 1 lemon
Extra lemon to serve, quartered 

Combine all marinade ingredients in a bowl or zip-lock bag and add the beef. Marinate for an hour or two.

Preheat the BBQ grill over medium-high flame.

Thread beef onto the skewers and place skewers on the grill. 

After 2 mins, start turning them until they're cooked to your liking, brushing the skewers with the marinade as you go.

Remove from the grill and set aside to rest while you grill the pita bread.
Brush pitas with garlic-infused olive oil and place on the grill for a minute on each side or until the pita are pliable.

Spoon tzatziki onto pitas, and add lettuce, onion and beef.

Serve these souva's with hot crnchy chips for a little extra crunch!
