Mediterranean Pasta Salad Recipe

Summer barbeques are the perfect time to enjoy pasta salad.

Don't tip out the oils in the olives and sun-dried tomatoes, they make the base of our dressing!

Makes a large bowl fit for a barbeque party!

 

1 x 400g pack pasta of choice

1 x 200g tub mixed pitted olives

1 x tub semi dried tomatoes

½ Radicchio, sliced

A big handful beans, top and tails removed and sliced on an angle

1 punnet cherry tomatoes, halved

A big handful baby spinach

1 x Spanish onion, sliced

½ bunch parsley, roughly chopped

Salt & Pepper, to taste

 

Cook Pasta as per pack directions and drain well.

 

Blanch beans in salted boiling water for 3 mins, drain and run under cold water.

 

Place all ingredients in a large bowl, add the oil from the olives and sun-dried tomatoes and a good grinding of salt and pepper.

 

Mix to combine, check the seasoning and adjust if needed.
