Garam Masala Spice Mix 

A spice mix is a great way to add flavour to your BBQ. Create the mix usining flavours you love then drizzle in olive or ricebran oil, mixing as you go, to create a thickish liquid or paste.

This Indian spice mix is perfect with chicken, fish and lamb.

Makes about 1 cup

  • 1 cinnamon stick broken into pieces

  • 2 heaped tbsp cumin seeds

  • 2 heaped tbsp coriander seeds

  • 2 bay leaves

  • 8 green cardamom pods

  • 1 tbsp peppercorns

  • 1 tbsp whole cloves

  • 1 dried chilli

  • Pinch of mace

  • 1⁄4 tsp nutmeg

    Toast cinnamon, cumin seeds, coriander seeds, bay leaves, cardamom pods, peppercorns, cloves and chilli in a small frypan over medium heat for about 3 mins or until they just start to darken.

    Place in a mortar and pestle and pound them until they turn to a powder. Stir in the mace and nutmeg.
