Chimichurri Sauce Recipe

Chimichurri is a classic South American condiment and gives so many dishes a fresh and zesty boost. It can also be used as a marinade and will happily keep in the fridge for a few days.

You want to taste a little zing from the vinegar in this recipe so make sure you taste it on its own to check the acidity and adjust with more vinegar or olive oil if necessary.

1 bunch of flat leaf parsley, finely chopped
3 cloves of garlic, finely chopped
1 red capsicum, finely chopped
1 tbsp dried oregano
1 cup of olive oil
1/4 cup white vinegar
Salt and pepper

Combine all ingredients well and season with salt and pepper to taste.
