Chicken Satay Skewers

There are two steps making great chicken saté. The first is the spice mix for marinating the chicken and second is the peanut sauce.

Don't have your BBQ flame to high, you don't want the marinade turning to charcoal!  And ideally, go for a metal skewer so it doesn't burn.

If you do use bamboo try to buy thick ones and make sure you soak them well.

 

Marinade Ingredients

5 cloves garlic, crushed

4cm piece ginger, grated

1 heaped tsp cumin

1 heaped tsp coriander

1 heaped tbsp turmeric

1 tsp salt

1 heaped tsp sugar

3 tbsp olive oil

2 tbsp desiccated or fresh grated coconut

2 tbsp ketjap manis

7 chicken thigh fillets, cut into small cubes

 

Combine all marinade ingredients in a bowl and add the chicken marinate for at least hour or overnight

Tread chicken pieces onto the skewers

Preheat grill over medium medium and BBQ skewers until just cooked though, remove and place on a platter or plates.

Drizzle over peanut sauce and serve the rest in dipping bowls. Garnish with chopped peanuts, coriander and fried shallots.

 

Peanut Sauce

If you want to make your own peanut sauce from scratch you’ll need 2 cups of peanuts instead of the peanut butter. Blitz them in a food processor.

 

300 g good quality smooth peanut butter

2 tbsp Ketchup Manis

1 tsp salt

3 tbsp warm water

4 tbsp olive oil

3 tbsp chopped peanuts

1 tsp palm sugar, optional

1 c water

 

Combine all ingredients in a medium sized saucepan over low heat and cook stirring until the peanut butter loosens into a thick sauce consistency. Add more water or oil if it looks to thick.
