Barbecued Buffalo Chicken Wing Recipe

This is a fantastic recipe that is quite easy. 

It's not your typical bright red buffalo sauce but it is a hot sauce!
We start the wings off in a foil tray, so they cook through before they hit the flame.
Makes 1kg

1kg chicken wings, wing tips removed
Olive oil spray
Coarse salt & cracked pepper
1 tbsp paprika

For the buffalo sauce:

1/2 cup hot sauce of choice
1/4 cup butter
1 tbsp Worcestershire sauce
1 tbsp cider vinegar
2 cloves garlic, crushed
1 tbsp honey
A good pinch salt

1/2 cup sour cream, to serve

 

Turn burners 1 and 4 to a medium-low flame and close the hood of your BBQ.

Dry chicken wings well with a paper towel, spritz with olive oil and season with salt, pepper and paprika. Place them in a foil tray or a baking dish.

Keep an eye on the thermometer - you're looking for about 150 degrees.

 Put the tray in the centre of the two flames, close the hood, and cook for 25 mins.

Remove the tray from the grills, turn on the second flame and once it's hot, place the wings on the grill to char them a little. They should only need another 10 mins or so.

To Make The BUffolo Sauce:

Place all buffalo sauce ingredients in a small saucepan over medium heat on your side burner.
Simmer until it thickens slightly - keep stirring, though!

Place the BBQ wings in a bowl with the buffalo sauce and toss to coat, or serve the sauce in a bowl on the side.
